The art of coffee
If you’re a coffee lover like us, then you know it’s not all about caffeine. Coffee is all about love, passion, flavor and creativity. It’s an absolute art and our baristas really know how to prove it.
The real passion lies with our baristas behind the counter who are just as excited to prepare your drink as you are to have it! And being a city that appreciates both flavor and beauty, we know the art of latte well!
NELLi café is also the first establishment in Quebec to install the new RS1 Rancilio Specialty espresso machine. This cutting-edge brewing technology combined with the industry’s revered Rancilio design creates a better epicurean coffee experience and has been used in the development of the NELLi house blend.

Pour-over is a method of making a small batch of filtered coffee by gradually pouring hot water over fresh grounds. The drip tray and filter help control the rate at which water flows and extracts flavor from our coffee grounds. But the recipe and the technique also count. To achieve perfect and delicious results, we use an accurate coffee / water ratio and control the size of our coffee grounds, the water temperature and the speed of our pour.
The art of latte pouring heated milk into espresso while forming a pattern on the foam is no easy feat. Now proficient in these designs to the point of making them flawlessly, our baristas took several weeks, and even months, to achieve the most complex designs. It demystifies for us in its broad outline this caffeinated art.
The sequences of precise gestures allow us to obtain a heart, a tulip, an elephant or other impressive creations. It’s like painting on an empty canvas by using milk!
Flat whites have been on the menus of specialty cafes around the world for some time now. But do you really know what they are?
A flat white is an espresso-based drink that contains steamed milk. This is a convenient option for those looking for a dairy drink with a strong coffee flavor that consists of a small amount of steamed milk and a thin layer of microfoam. If you want a coffee that gives you a strong espresso taste, but with the creamy mouthfeel of steamed milk, this is a great choice.
Cortado comes from the Spanish word “cortar” which means to cut. This delicious espresso drink contains hot foamy milk which “cuts” the acidity of the espresso.
This creamy drink consists of a 1: 1 ratio of milk froth to a double dose of brewed espresso. A cortado is served in a small glass with a small layer of foam. If you are looking for a great espresso drink that is a bit out of the ordinary, then you should definitely try a cortado.
Matcha is a very fine powder of ground green tea, crushed between two stones. It is our Japanese friends who must be thanked for this little wonder. This green powder is packed with nutrients, antioxidants and unlike coffee, it releases its caffeine over a period of hours. In traditional or latte versions, matcha drinks quench your thirst in a unique way!
